My absolute favourite is roast dinner with a nut roast or a 'Cheatin' Turkey Roast' and tons of veg, mandatory ones being roast parsnips and mashed swede Devonshire-stylee.
On a cold day, I adore a big old stew of different veg, dumplings, beans etc.
And for a quick and easy meal I love roasting some broccoli, aubergine and peppers, making some (very garlicky) tomato sauce and scoffing it with a heap of pasta.
And having now made myself hungry, I'm going to make a quick Thai curry with asparagus, broccoli, baby corn & tofu and have it with Jasmine rice and some veggie spring rolls.

Has to be Pizza, with lots of peppers, tomatoes, cheatin ham ,black olives, sun dried tomatoes, vegan cheese grated over the top and a dash of olive oil
recently tried Redwoods, vegan chorizo, had some on a pizza, gorgeous
Roast dinner is also a fav, usually a nut roast or one of the meat free roasts, with sage and onion stuffing, lots of veg, bread sauce, etc

I'd go along with the roast dinner and also pizza too - We usually make a sort of Cheezly sauce for our pizza topping... Just like making a basic white sauce but with grated cheezly and Engevita yeast flakes in it to make it taste even more cheesy! It really makes it really tasty :-)
My absolute favourite meal though would have to be something like veggie chicken skewers with hot peanut sauce, followed by veggie ribs and Peking sauce and then veggie chicken with tomato and vegetables served with rice... all at Veggie World in Bletchley. For those who don't know it, It's a chinese restaurant that is entirely veggie and 99.5% vegan.
We used to live near to Veggie World, but we relocated our business (Green Valley Trading Co.) further north a few months ago. Even so, the food is that good that we still travel down there from time to time just to go for a meal! It's worth the trip every time.
Veggie world sounds great! Will pay it a visit when I'm next up that way.
We're lucky to have two fab Chineses close to us too - they're not exclusively veggie but both have a great veggie/vegan selection including mixed Hors d'œuvres (peking style 'ribs', satay 'chicken' etc) and crispy 'duck' with pancakes.
Peking Palace, Sawbridgeworth. Very popular place, great food, nice decor. Incidentally, it's frequented by a very famous footballer and wife who have a house just up the road (when they're not in LA).
Peking Garden, Epping. Really good veggie/vegan selection, friendly staff. On the downside, the decor could do with a bit of an update.

Can't reckomend the Straw Hat also in Sawbridgeworth, expensive but if they know you are veggie/veagn the will go to no end to come up with different menu items ... i think the ower is a veggie so that always helps.

My favourite is Maccaroni cheese, with Cheezly sauce.
And Thai curry.
And pasta carbonara. Vegan cream, bacon/ham, leeks and mushrooms all cooked in the cream over spaghetti - yum!
